What’s your go to dressing for salads? Mine is very basic and all time favourite, can never go wrong with this one 😁 This frame is a yummy example of using Chana Dal in my meals 😁 Can’t get enough of salads and when there are lentils or legumes in it, I am all the more in love with my plate 🥰

What’s cooking? Chana Dal Salad, the crunch of veggies and sweetness of apples works like a charm in here 🤤 Adds a good variety to my weekly menu and so filling + hearty 🥰 The idea is to find comfort in my salad bowls by adding all the colours possible ❤️

Serves 3
1 1/4 cup chana dal, washed and soaked for 2 hours
1 tsp turmeric, 1 tsp salt, 2 cups water
1/3 red onion, 1 cucumber, 2 tomatoes, 1 green chilli or jalapeño – finely chopped
1 cup shredded carrots
1 apple, finely diced

*Dressing*
3 tbsp lime juice
1 tbsp olive oil
1/2 tsp salt
1/2 tsp cumin powder
1/2 tsp red chili powder
1/2 tsp pepper

Pressure cook dal with 2 cups water, 1 tsp turmeric, 1 tsp salt for 10 mins in IP or 2 whistles in a cooker, don’t over cook cos we need to retain the texture. Natural release pressure for 10 mins, then quick release. Drain water (use in soup or dough) Rinse dal under cold water. In a bowl combine cooled dal, veggies, apple, cilantro and gently combine. Add all the ingredients of the dressing in the order mentioned, ready to relish ❤️
